Making It Simple To Add In Some Protein
BY JENNY SMITH MATTFELDT Published August 27, 2024
These days we're all trying to hit protein goals but let’s be real— it’s easy to fall short of getting enough in your daily diet. That’s why I’m kicking off a little series of easy recipes designed to sneak in some extra protein, making it easier than ever to fuel your body and feel your best.
Breakfast burritos are kind of like the first recipe in this series, very versatile. Whenever I notice that I've been a little off the rails with my eating lately I like to reset with some meal prep for the week. Breakfast burritos are such an easy way to do that because you can toss them in the freezer and save them for later.
Southwest Breakfast Burritos |
For one burrito... 1 carb balance Mission tortilla 2 scrambled eggs 3 ounces of turkey sausage diced tomatoes Chipotle Seasoning and Red Pepper Flakes |
These are as quick and simple as it gets Prepare all your filler ingredients and set aside (for mine I just did eggs, meat, and tomatoes but for my partners I added some hash browns and black beans) Tear sheets of tinfoil and lay out all your tortillas - this makes it easy to fill them all at the same time. Roll up the burritos, seal them in a pan on med/high heat, let them cool, then roll then up in the tin foil I like to label ours then pop them in the freezer The night before you want one just pull it out and put it in the fridge, microwave or airfry in the morning! |
That simple! The macros will vary depending on the ingredients you add but mine ended up just over 35 grams of protein. I'm always on the look out for new variations so let me know how you do yours!
