Updated: Aug 19

Making It Simple To Add In Some Protein

BY JENNY SMITH MATTFELDT Published August 19, 2024

These days we're all trying to hit protein goals but let’s be real— it’s easy to fall short of getting enough in your daily diet. That’s why I’m kicking off a little series of easy recipes designed to sneak in some extra protein, making it easier than ever to fuel your body and feel your best.

The great thing about banana bread it's one of those recipes you can play around with. As long as you have the basic components right you can tweak this recipie any way you like. This version has vanilla protein powder and cranberries but I love using a coffee protein powder and adding chocolate chips.

Cranberry Vanilla Banana Bread

2 - 3 ripe bananas

1/2 cup melted butter

1/2 cup buttermilk (easy hack from my mother measure out your milk and add a little bit of lemon juice)

3/4 cup brown sugar

1 cup flour

1/2 cup vanilla protein powder

Vanilla extract - measure with your heart

1 tsp baking powder

3/4 tsp baking soda

1/4 tsp pink salt

1/2 cup optional add ins - today I used dried cranberries, you could also use chocolate chips, walnuts, etc

Preheat oven to 350 degrees

In a bowl mash the bananas with a fork until they're smooth. Stir the melted butter into your banana mixture, add in buttermilk, vanilla, and sugar

Add dry ingredients and mix together, then add in your extras (cranberries, chocolate chips, etc)

Pour mixture into greased bread loaf pan

Bake for 40 - 60 minutes, until wooden tooth pick comes out relatively clean

Remove and allow to cool
